Hotdog Sliders

I was thinking of an awesome easy recipe that I absolutely love and I think you would too. I
make this when I want something spicy and tasty and I really love them alot, so please enjoy! The portion is for two, but you can double it for more people. Sorry that I didn't have any pictures...I scarfed it down and forgot the pics:(

Hotdog Sliders (serves 2)
3 hotdog buns, cut in half
3 Cheddarwurst or hotdogs, sliced in half
3 tbsp. Chow Chow* or relish
3 tbsp. green onions, thinly sliced
3 tsp. chipotle BBQ Sauce
1 tsp. red pepper flakes


Place buns in skillet, to get a slight crisp. Oil skillet and place cheddarwursts in the pan and let get slightly brown and crispy. Once cheddarwursts are done, blot in papertowel. Put chow chow, green onions, and red pepper flakes in skillet and let cook for 2 mins. Place cheddarwursts, chow chow mixture, and chipotle BBQ sauce on hot dog buns.

* Chow Chow is like a spicy relish and can be found at Wal-Mart on the condiments aisle. If you cannot find it, regular relish works just as well.

2011.


I can't believe it has come to this. Don't get me wrong, I am so glad that we are about to be in a new year (yay!). So many crazy things happened this year, but it feels good to know that God knows what he is doing in my life and I am definently letting him take the lead. He has been good to me and I am so grateful!
As for new year's resolutions, I hate the name resolutions, so I always consider it things you would like as a goal for the new year. Hopefully, it will be things that I can keep up with, but we'll see, but so far, there are a few "goals" that I have come up with:
  • Lose some weight- I always say this one, but now I think it is time. I am ready to put my energy and willpower in getting this weight gone. I need SELF-CONTROL!
  • I think I am going to become vegetarian again- I want to become a veggie, but I am giving myself 2 months to see how it goes. That will help with the weight loss, but I also want to do it for me.
  • I want to live this year with no regrets- things happen for a reason, and instead of dwelling on the past, I want no regrets.
  • I want to be a better parent- I always say this one, but I want to be more patient and be there for my daughter, she is awesome and she needs me; I need to be an example.
  • I want to rediscover myself- I need to think about what I want and why I'm here...take it day by day, but enjoy being single and learn to truly love me; and take care of myself and build my personal relationship with God.
  • This one is very hard- I want to stop drinking alcohol- I rarely ever drink now that I am always busy doing other things, but I know I shouldnt be doing it and I really want to eliminate it altogether. It seems like drinking is a major passtime and it is such a social thing to do, but I need to have self control and not do it.
Now we will see how these goals go, but I am serious about all of them and I want to reach my goals. I will keep you updated.

P.S. Everyone loved the chocolate pecan pie- it was awesome and I am going to be making another tomorrow and I will put up the recipe and take pics. Also, I will be posting some of my favorite foods to eat while dieting. Maybe it can help someone jumpstart like me:-)

Broccoli Fish Bake-courtesy of Allrecipes.com

Disclaimer- I'm sorry, I have no pictures with this post, because I clearly ate all of it...lol, but it was absolutely amazing!

It was so cold here and I was too lazy to go to the store, so I was trying to concoct up something that I could eat for dinner that would be yummy and prevent me from having to fight through the crowds for groceries, so I found this recipe on http://www.allrecipes.com/ and I give it two thumbs up! It tasted awesome, but I made my own variations of it and I am going to post my variation- it turnes out really good; it's easy and I am going to make this over and over. Enjoy!


Broccoli Fish Bake (My version)

Ingredients

  • 1 (10 ounce) package frozen broccoli spears, cooked and drained
  • 1 pound fresh or thawed frozen firm tilapia fish
  • 1 (10.75 ounce) can Campbell's® Condensed Cream of Mushroom Soup
  • 1/3 cup milk
  • 1/4 cup shredded Cheddar cheese
  • 1 tsp. Red pepper flakes
  • 1 tsp. black pepper
  • 1 tsp. seasoning salt

Directions

  1. Season fish with red pepper, black pepper and seaosning salt. 
  2. Arrange broccoli in 2-quart shallow baking dish.
  3. Top with fish. Mix soup and milk and pour over fish. Sprinkle with cheese.
  4.  Bake at 450 degrees F for 20 minutes or until fish is done.

My favorite things- foodie edition

One other thing that I will do on this blog (thank god I can do what I want), is that as far as food is concerned I will definently be posting things that I love from different restaurants or something I made or someone else makes or something that can be bought. Today, I am starting with something that I have been bragging about like crazy.

Starbucks VIA-It is absolutely the most amazing thing EVAR! I love going to Starbucks, but now I have become so spoiled, because they have created this. It can be taken anywhereand just pour in hot water and it tastes exactly like what you can buy in the stores. I buy the 3 pack, because I don't drink it everyday, but I love having it as a treat. Awesome! Please try immediately, and for Christmas, I mixed it with eggnog and it was even better.

My wishlist

Christmas starts in an hour and I know that I won't be getting any of these things, but I would love to have the following things in the kitchen. But knowing me, I will splurge and get them for myself or just keep daydreaming about them.
I think that cupcake holders are so chic and adorable and it makes displaying cupcakes very pretty. I am always making cupcakes, so it would be awesome to have.

I used to think that aprons were pointless, but now that I am always in the kitchen, it makes perfect sense. It would save you from cleaning stains in my clothes and it is so my taste.

Need I say more? KitchenAid stand mixer...I think everyone, including people that don't cook want this mixer. It is awesome and makes life so much easier. I think this is a tax splurge just for me and it would def be in yellow.

I have always wanted one of these to do on my cupcakes and cakes, so I want to get one, but until I get one like this from Williams Sonoma, I will settle for one at Target.

Hello there.

Hi there! My name is Jessika and I want to say welcome. Let me give you a little bit of a background on this blog. I have decided that I would like to start a new blog about the things that I love, cooking.  I love baking and I am actually pretty good at doing it, but I don't do it enough. I am so busy with work and parenting, that I don't take time out to do what I love. So before the new year starts, I would like to start this blog and focus on cooking/baking adventures. I want you to be there through the successes and the mess ups as far as the recipes go. I want my focus to be on baking, but I will share other recipes along the way.

The goal for the blog and that I am going to set for myself, is that once a week (preferably the weekend), I will bake something. I love to do it and I am good at it, so it is something that I should have as a fun hobby. I will be reporting the recipes that I try or even create, so you will have the opportunity to see how it turned out or even try it for yourself. I am excited, because this will be something new and attainable and I hope that you are there to check it out.
